The traditions of menu preparation have been handed down by generations are still found in this area today, sometimes embellished and constantly improved, with new ideas or ingredients. Wherever possible our dishes use local products such as olive oil, wine, vegetables, fish, cheese, cured meats and local honey. All fresh and cured meats and vegetables are produced locally in villages near to Viterbo. Typical products from Bagnaia include salami and our famous oven roast, herb flavoured pork.

You can enjoy traditional local dishes such as home made pastas. For those who like stronger flavours there is Viterban Lombrichelli made with a spicy meat ragu. Of particular note is our Bagnaian Polenta, served with sausages and mushrooms.

For the second course it is well worth trying the carved Viterban beef flavoured either with pancetta and rosemary or rocket and porcini mushrooms.

For vegetarians there is a wide range of dishes available. Bean or vegetable soup which is changed every day according to available products. The grain, mushroom and pumpkin soups are also worth trying and are always popular.

Our fish recipes are simple and light and use only the highest quality ingredients. Only extra virgin olive oil is used and the freshest products make it to our kitchen from the fish itself to the characteristic aromatic herbs.
